This is the last keto blog of 2021! This year has been full of ups and downs, ins and outs, hello’s and goodbyes; but the fact that you’re still here as a valuable member of this community speaks volumes!

If you are like me, 2021 has been an eye opener. No matter what is happening around us, our health is the real wealth.

With that being said, our ucanketo community has continued to grow, and your input has meant the world to so many. We’ve shared experiences, hopes, goals, and keto information to help us all remain on track – and what I have learned is that the world is full of so many great humans with good intentions. 

Whether you have lost a hundred pounds, 10 pounds, reduced medications, become more mobile, taken better care of your physical or mental wellness, or learned to love cooking – the point has always been that this community is not only a point of reference for all things keto, but it’s a safe space for those who are making changes to live a better life. 

In 2022, I’d like to share more recipes with y’all.

I’m not much of a cook myself, but I want to practice what I preach…..and, I love to eat!

So, for the last blog of 2021 I’ll leave you with a recipe that is quick, easy, and a huge favorite!

Buffalo Chicken Meatballs

(makes about 16-18 meatballs)

Ingredients:
  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup almond flour
  • 2 green onions chopped
  • 1 teaspoon garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2/3 cup hot sauce (Frank’s is Keto friendly)
  • 1/2 cup butter melted
Instructions:
  1. Preheat oven to 350°F and line a large baking sheet with parchment paper.
  2. Combine ground chicken, egg, almond flour, green onions, garlic, salt & pepper in a large mixing bowl.
  3. Use a small cookie scoop to form the mixture into meatballs, or you can roll them by hand.
  4. Bake for 18-20 minutes
How to make the Buffalo Sauce:
  1. Whisk together hot sauce and melted butter in a large mixing bowl.
  2. When the meatballs are done baking, allow to cool slightly and toss in the buffalo sauce. Do this gently so they don’t fall apart,
  3. Serve with blue cheese or ranch dressing.

This recipe serving size should be measured by weight for more exact information. Remember, weigh foods until you can eyeball what a serving size looks like for your particular dietary needs, this will always be how you’ll get the best results, especially when you are in maintenance!

Otherwise we are looking at about 1g carbs, 5 g protein, 8g fat, and around 100-115 calories for your Macros.

For those of you who will wonder if you can do the same with beef meatballs, you can do what you like, but I would not advise to mix Buffalo with beef flavors.
