If you have been here for a while, you know I don’t particularly love to cook, but this keto mac and cheese recipe is delicious and simple enough that it feels like a more manageable task. Spending hours in the kitchen is not my idea of a good time; however, I enjoy it the more adventurous I become. 

If you are someone who loves to cook, you inspire me! But, in the meantime, I’d like to share the keto recipes I have found to be the most simple and tasty. Plus, who isn’t a huge fan of mac and cheese? Hold the mac… of course. 

This recipe replaces the pasta with cauliflower for a much lower-carb alternative. It’s not exactly the same, but I promise you it is a dish everyone can and will enjoy!

Here’s what you’ll need: 
  • Pink salt, as needed. Plus 1/2 teaspoon
  • 1 large head cauliflower cut into small florets
  • Vegetable oil spray
  • 1 cup heavy cream
  • 2 ounces of cream cheese, cut into small pieces
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 cups shredded sharp Cheddar, plus 1/2 cup for topping the casserole
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon garlic powder

And an 8×8 baking pan.

Here is what you are going to do with these keto ingredients: 
  1. Preheat the oven to 375 degrees F. Bring a large pot of water to a boil. Season the water with salt.
  2. Spray the baking dish with vegetable oil spray.
  3. Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain the cauliflower well and pat it between several paper towels to dry. Transfer the cauliflower to the baking dish and set it aside.
  4. Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Stir in 1 cup of the cheese, salt, pepper, and garlic and whisk until the cheese melts about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. 
  5. Top with the remaining 1/2 cup cheese and bake until browned and bubbly hot, about 15 minutes. Serve.

For extra spice, add dried chili pepper, sprinkle parmesan cheese on top, or add some gruyere cheese to the mixture. I even know some people who like to add jalapenos and Monterey Jack cheese to theirs!

This keto mac and cheese can be served with chicken, salmon, beef, sausage, pork, or shrimp. Whatever your keto protein choice is, I’m sure it will work with this dish.

I believed I would get bored of eating the same things day in and day out, but fortunately, this never happened!
