I want a show of hands for everyone who began their keto journey, NOT knowing how to cook, then let me show you how to discover keto recipes that are right for you! 

I know what you may be thinking… a recipe is a recipe, right? Well, not necessarily. When I began my keto journey, I could barely cook anything.

I liked to eat, but the cooking part was not my strong suit, so I often ate takeout. This is not shocking, I’m sure.

Those who avidly eat takeout often have declining health and weight issues.

The point is I needed recipes that were easy to follow and did not require too many steps. 

A recipe is not just any old recipe… so let’s break this down a little: 

Some recipes are gourmet. This means there could be many steps tools the average non-cooker may not have to prepare a dish, or there could be ingredients you don’t have and don’t want to have. But then, there is the time; food creation can take a lot of time.

Some recipes are somewhat complicated but can feel like an adventure for someone who enjoys new things. These recipes could be one’s you have tried somewhere, so you have an idea of what you’re getting into, and they likely do not have the tricks and tools required to make the keto dish. 

Then, there are recipes like many of the ones I post.

They are simple, always guaranteed keto, less likely to require an array of kitchen utensils or tools, and as few ingredients as possible. Don’t get me wrong, my team does their best to ensure y’all have a variety of keto recipes to choose from, and many come from ucanketo members themselves. But, I promise you, the keto recipes I share gain excellent feedback from our keto community! 

Here is a ucanketo favorite recipe, and I hope this one is right for you!
Pesto Shrimp Skewers:

The great thing about these is the shrimp can easily be replaced with chicken, and while this recipe will walk you through cooking them on a sheet pan, they will be perfect for the BBQ as well!

Ingredients:
  • 12 Jumbo shrimp (or chicken if you prefer)
  • 1 medium zucchini, cut into 1 inch thick half moons
  • 1/2 red onion, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup basil pesto
Instructions:
  1. Preheat the oven to 450 degrees.
  2. Arrange 3 shrimp and assorted veggies on 4 skewers.
  3. Place on a sheet pan with parchment paper, drizzle them with olive oil and then season with salt and pepper.
  4. Bake for 12 – 15 minutes or until the shrimp is cooked through. Be careful not to overcook the shrimp, or they will be extra chewy.
  5. Remove and brush the skewers on both sides with basil pesto.
  6. Serve immediately.
Keto can be THIS easy and THIS delicious.

If complicated or more advanced recipes are something you enjoy, that’s great too. The point is, with keto, there is something for everybody.
