My favorite keto chaffle recipe was pumpkin chaffles, but the keto chocolate chaffles recipe is a close second! 

What are Chaffles?

If you are new to keto, chaffles are a keto version of waffles. Made in a waffle maker, it is often a combination of shredded mozzarella cheese and eggs. The addition of low carb flours like almond or coconut flours are what give that delicious waffle texture. The waffle maker creates a crispy outside layer, while the inside remains soft and chewy. Sounds great, right? 

To date, keto pumpkin chaffles have been a regular occurrence in the Smith-Hightower home, even the ones I make with nut butter are delicious.

But these Keto Chocolate Chaffles are so good!

Ingredients
  • 2 tbsp Unsweetened cocoa powder
  • 1 large Egg
  • ½ cup Shredded mozzarella cheese
  • 3 tbsp Almond or coconut flour
  • ¼ tsp Sugar free vanilla extract
  • 1 tbsp Powdered sweetener
  • ½ tsp Baking powder
Instructions
  1. Add all of the ingredients to a small mixing bowl. Mix with an immersion hand blender until smooth.
  2. Heat your mini waffle maker.
  3. Brush with a little oil to prevent sticking. Add ⅓ of the batter to the middle of the waffle maker and spread out. Cook for about 3 minutes.
  4. Open the lid and allow the Chaffle to cool in the waffle maker for about 10 “mississippi”  seconds. You’ll then be able to lift it out with a fork without bending.
  5. Place on a wire rack to fully cool. Repeat with the remaining batter.

Each chaffle is only 2.4 g of net carbs. They are great for a weekend brunch or as an afternoon sweet treat. 

Sounds Easy, Right?!

That’s because it is! Toppings can be anything from keto high fat whipped cream, to keto syrups, berries, sugar free caramel sauce, peanut butter, or toasted nuts. Whatever is your chocolate go-to, since I know we all have our favorites! 

Commonly asked questions:

Do chaffles taste like cheese? No, they typically don’t unless you want them too. Mozzarella is such a mildly flavored cheese that it easily assumes the flavor of the other ingredients you plan to add. If you want them to taste cheesy, add a cheese with a stronger flavor.

Do you have to use a waffle maker? I couldn’t imagine another way to make waffles, this is the easiest way to make them. I love using my mini waffle maker because it’s super easy to use and to clean. Plus, using the mini waffle maker is the best way to remain in control of portion sizes!

Can they be vegan? No. Chaffles need the egg to hold all of the ingredients together. However, I have never explored using a keto friendly egg substitute. If you do, please leave the outcome in the comments! I’m extra interested in how they’d turn out with vegan cheese as well. 

Whether you are new to chaffles, or a chaffle expert, you will love this recipe. Sweet or savory are the only choices I ever have to make when it comes to chaffles, plus, everyone in the family has a fave and they can all pitch in and help with the preparation. Even Thomas.
