It’s almost my favorite time of the year when it comes to keto-friendly fruit: Strawberry season!

Low in carbs and sugar, strawberries are keto friendly and super nutritious! 

Strawberries are high in fibre and antioxidants. One entire cup of strawberries, which is about 150 grams, contains 9 net carbs. One small strawberry has about 0.4g net carbs. 

Translation: you can enjoy a handful of strawberries without being kicked out of ketosis!

There are a million keto ways you can enjoy strawberries, so I am going to leave you with two of the best keto recipes that include strawberries (IMO). 

No Bake Strawberry Cheesecake: 

Ingredients:

Crust:

2 cup almond flour 

¼ cup / 50 g butter unsalted

3 tbsp granulated sweetener

1 tsp vanilla extract

Cheesecake filling:

16 ounces full fat cream cheese 

1 cup heavy whipping cream double cream

10 ounces (2 cups) chopped strawberries 

1 sachet gelatine (12g) and 2 tbsp very hot, but not boiling water

2 tbsp lemon juice

Zest of 1 lemon

6 tbsp powdered sweetener of your choice

Instructions:
  1. Line the base of a springform pan with a 20 cm diameter with parchment paper.
  2. Make the crust: Mix the almond flour with the softened butter, sweetener and vanilla. Gently press into the springform with your hands.
  3. Blend the strawberries until smooth. Set aside.
  4. Whip the cream until nice and firm. Set aside.
  5. Blend the cream cheese, lemon juice, zest and powdered sweetener until smooth.
  6. Dissolve the gelatine according to the manufacturer’s instructions. 
  7. Pour liquid gelatine into strawberry mix and stir.
  8. Add the strawberry mix to the cream cheese mix and blend until combined.
  9. Then add the whisked double/heavy cream and briefly blend until just combined.
  10. Pour the cheesecake filling into the springform, cover and chill at least 4 hours or I would suggest overnight in the fridge.

Something I found that made cutting this cake easier is to put it in the freezer for 30-60 minutes before serving it, then letting it sit for a few minutes before enjoying it. Trust me, this is worth the few extra steps. You will NOT be disappointed!

Keto Strawberry Milkshake:

3/4 cup unsweetened almond milk or water 

1/4 cup coconut milk or heavy whipping cream

1/2 cup strawberries, fresh or frozen

1 tbsp MCT oil or extra virgin coconut oil

1/2 tsp sugar-free vanilla extract

If you prefer a thicker shake, you can add 1 tbsp chia seeds before blending.

Instructions

Toss it all in the blender with some ice and enjoy!
