It’s the season for all things pumpkin, so what’s better than to start with a recipe for keto pumpkin bread! Pumpkin is a popular flavor in fall cooking because it is rich, warm and nutritious. I love foods like keto pumpkin pie, soups and breads; and the notorious pumpkin spiced latte. 

Canned pumpkin is convenient to use, but fresh can be just as nutritious. Make sure you are following instructions when using fresh pureed pumpkin as it often requires being strained of its excess water. 

Don’t like pumpkin flavored things? 

Pumpkin seeds are a delicious snack when roasted, and can be versatile depending on how you season them. Use the rest of the pumpkin to make fun jack-o-lanterns for your porch!

Ingredients
  • 2 cups almond flour 
  • 1/4 cup sweetener (or to taste)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon or pumpkin pie spice
  • 1 cup pumpkin puree
  • 3 eggs 
  • Optional ¼ cup keto chocolate chips
  • Optional ¼ cup nuts
Instructions

Preheat the oven to 325 F. Stir all ingredients until smooth, then pour into a 9 x 5 loaf pan. 

Bake in the oven’s center rack for one hour. 

If you let the keto pumpkin bread cool completely before going around the sides with a knife and popping out the loaf will ensure it doesn’t break. 

The pumpkin bread can be loosely covered and left out overnight, or refrigerate leftovers for up to five days, or slice and freeze.

Pumpkin is multi-purpose!

Pumpkin is delicious when used in baking, as it is in this keto pumpkin bread recipe. But, did you know that pumpkin is great for your immunity, eye health, skin, heart, and your metabolism? Full of vitamins A, C, E, B5 and iron (amongst others), pumpkin is packed with goodness. 

Pumpkin spiced desserts and foods are a favorite for a reason! Did you know that pumpkin pairs well with curry dishes? Just add some pumpkin and coconut cream to curries to add a different dimension to your dish. 

This gluten-free pumpkin bread recipe is so delicious you’ll be making it all fall and winter. You can enjoy it plain, toast it for breakfast, or enjoy it as an afternoon snack.  The next time I make this pumpkin bread, I may try it as French toast! 

You are going to love this recipe because it is as easy to make as it is healthy.  It’s slightly sweetened, which makes it perfect for breakfast or a snack.  If you prefer something sweet, try something different and serve this recipe for dessert. You can add a keto cream cheese frosting.
