For those of us who live in areas of the world where climate changes, we know the value of fresh keto produce that is in-season. The days of bacon and cheese being delicious keto staples are gone, and we are living a life of variety and nutritionally balanced foods while keto.
This includes the addition of fresh produce in our keto meal plans.
Those who know, know that produce that is shipped when it is not in season is often flavorless and not as nutritionally dense as it is when it is in season. With all of this being said, let’s explore!
Fresh Vegetable Keto Produce in Season
Bell Peppers are keto friendly, and delicious raw and cooked! The carbs in bell peppers are low enough to enjoy frequently, although the exact macros vary by the color you choose. Bell peppers carry a ridiculous amount of vitamin C, and they also contain healthy doses of vitamin B6 and magnesium.
Cucumbers are another keto friendly, low carb vegetable that is in season right now! For a lower carb transition, peel them. But, the truth is, cucumbers are low in carbs anyway. Cucumbers are a great source of fiber, vitamin C, and potassium.
Radishes are an often slept-on carb alternative while keto! Radishes are delicious raw, but can be eaten cooked, roasted, and seasoned much like potatoes. They are high in vitamin C and vitamin B.
They are also a great source of calcium and magnesium.
Zucchini is a keto favorite. Zucchini’s have a wonderful flavor when they are eaten in-season, but can be almost flavorless when they are not. Zucchini is high in both vitamin B6 and Vitamin C.
Vegetable Season Should Be Taken Advantage Of!
If having delicious and flavorful produce isn’t enough, let’s talk about the dramatically reduced price of in-season keto vegetables!
I’m always looking for great deals on all things keto! While not all vegetables freeze well, most do.
The nutritional value also becomes frozen in time, making these veggies just as nutritious as the day you froze them.
My advice for fresh Keto produce:
Freeze fresh produce in relation to what thaws and cooks well. For vegetables that don’t, you can cook them in meals and freeze the meals to make those super busy days easier!

Out of all the vegetables listed, my favorite ways to eat each are:
→ Raw bell peppers and keto dill dip – OR – stuffed with beef!
→Cucumbers are the best on their own or in the delicious creamy cucumber and dill salad I have posted on all of my socials recently.
→Radishes are the best roasted or raw.
→ Zucchini… always GRILLED. I absolutely love grilled zucchini.

I’ve always enjoyed summertime with all the fresh veggies. We have a garden and so I really enjoy them. Plus, I love canning. So win-win for me.
I used to hate but have come to love brussels sprouts. I sprinkle them with just a little bit of salt and pepper. I have thrown them in the Insta pot with some chicken and some chicken broth or roasted them and I steamed them! It is good no matter how do you fix them.

Stir fry veggies are so dam good omg with cauliflower rice. I even Sautee and put over salads so filling.

Love summer time so much for the fresh veggies they taste so much better from the garden and they are much cheaper so I try to stock up the freezer for better tasting veggies in the winter.
