One-pan keto meals are my absolute favorite meals to prepare. This bacon cheeseburger casserole is at the top of my list because it is super easy to make and requires one pan. You can’t get easier than this!

And, let’s face it. The addition of bacon makes everything taste a little better. The idea of a one-pot meal with bacon sounds magical!

So, if you are prepared to create your family’s new favorite dish, let’s get started.

Bacon Cheeseburger Casserole

You will need the following:

Ingredients
  • 4 1/2 slices of Bacon (cooked and chopped)
  • 1lb Ground beef 
  • 1/2 an Onion (chopped)
  • 2 Tbsp. of Tomato Paste
  • 1 Tsp of Mustard
  • 2 ounces of Cream Cheese
  • 1/2 cup of Beef Broth (Kettle & Fire is perfect with this recipe!)
  • Spices- garlic powder (1/2 tsp), onion powder (1/4 tsp) , salt (1/2 tsp), and pepper (1/4 tsp) & whatever else you would typically season your homemade burgers with
  • I cup of Cheddar Cheese
Let’s get this bacon cheeseburger casserole started!
  1. Heat a large skillet over medium heat. Lightly spray with the keto cooking spray of your choice.
  2. Cook the chopped bacon until crisp, remove from the skillet and set aside.
  3. Drain off all of the bacon grease except about 1 tablespoon. Add the ground beef and onion. Brown the meat and drain off any excess grease.
  4. Add the tomato paste, mustard, cream cheese, broth, and spices. Stir until the cream cheese has melted and a sauce has formed.
  5. Reduce the heat to low and top with cooked bacon and remaining cheese.
  6. Cover the skillet and cook on low until the cheese is completely melted, or broil the cheese at the end for a crispier layer.
What to Pair This With

This low-carb keto casserole pairs well with green beans, a salad, cauliflower rice, or air-fried broccoli. I have had this casserole with steamed cabbage as well; although I was not a fan, it was an excellent pairing for those I was with!

Can You Keto Meal Prep This?

You definitely can! I would not attempt to create this entire meal and freeze or refrigerate it. Instead, it would be best to prepare the meat ahead of time and store it in a way that suits your needs. Grate the cheddar cheese and store it to save time as well. But, for preparing the entire meal ahead of time, I would have the meat and cheese stored separately and use them when you are ready to put the meal together to save time.
