Nothing says “it’s fall” like meatloaf, and this keto meatloaf recipe has been tried and tested to be one of the best. 

Meatloaf as Breakfast?

Did  you know that meatloaf was originally a breakfast meal? Neither did I!

In the 1800s and leading up to the Depression, meatloaf was a concoction of leftover meats, bread soaked in milk, spices, and leftover vegetables.

It was a way of using up all the leftovers in the fall and winter months. Americans just did not waste food the way we do now!

While we still use many of the same ingredients today, we typically eat it as a dinner addition. Anyway, do what you will with this delicious keto meatloaf recipe:

Ingredients:
  • 1 large egg
  • 2 lbs ground beef 
  • 1 teaspoon pink Himalayan Salt
  • ½ teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ½ teaspoon dried thyme
  • ½ cup blanched finely ground almond flour
  • ½ cup grated Parmesan
  • ¼ cup unsweetened ketchup
  • Optional – chili flakes or hot sauce
Instructions:
  1. Preheat your oven to 350° F & line a rimmed sheet pan with foil.
  2. In a large bowl, whisk together the egg, salt, pepper, garlic powder, onion powder, and thyme.
  3. Add the ground beef, almond flour, and Parmesan. Gently mix just until uniform. Do not handle too much, or it can turn out tough.
  4. Shape the mixture into a rectangular loaf and place it on the prepared baking sheet. Brush the loaf with the sugar-free ketchup.
  5. Bake the meatloaf until the center of the loaf registers 160° F, 50-60 minutes.
  6. Rest the meat for 15 minutes before slicing and serving.

Some great sides for this keto meatloaf recipe are mashed or steamed cauliflower, an arugula salad, or steamed broccoli.

An Extra Piece of Keto Meatloaf Advice

A few things to note are 1. Don’t handle the meat too much. Gently shape it, and place it on a pan. Too much handling will cause the keto meatloaf to cook more like a brick and less like a loaf. 2. Using a sheet pan is better than a loaf pan because it allows the edges to become crispy. A loaf pan will cause it to bake in its own juices, making it more crumbly when removed from the pan. 

The thing I love about this keto meatloaf recipe most is that it is simple. If you have secret family ingredients to add, share them in the comments. I like my foods simply seasoned, whereas others enjoy a more diverse flavor experience. Like, I think black pepper is spicy, lol!
