With 2023 at a close, what’s better than starting a new year with new keto recipes?

This keto life has come a long way since I began almost a decade ago. There was a time where I believed I would have to surrender my life to cheese and meat platters. Truthfully, this is a big reason I started this keto community, to share experiences, results, and recipes. 

Keto never has to be boring, and I know you will be able to bring new flavors into your homes with recipes I have tried – so, you know they’re relatively simple, and delicious. 

The following keto turkey meatball recipe can be made with beef as well, but I learned to love ground turkey as long as it’s prepared in ways I like. Meatballs is one of those ways.

Keto Turkey Meatballs

Turkey Meatballs Keto recipes
Ingredients

1.5 lb (675g) minced (ground) turkey – or beef

1 red bell pepper finely chopped

1 large egg lightly beaten

4 tablespoons minced fresh herbs like parsley

1 tablespoon minced fresh cilantro (if this is your preference)

Salt to taste

Black pepper to taste

Garlic powder to taste

Cooking oil is required for the air fryer.

Instructions
  1. Preheat the air fryer to 400F / 200C.
  2. Mix all the ingredients (minus the cooking spray) together in a bowl.
  3. Shape into 1-1/4-in meatballs.
  4. Place half the meatballs in a single layer in an air fryer basket; cook for 7-10 mins until lightly browned and cooked through,(shaking halfway through).
  5. Remove and repeat with the remaining meatballs.
  6. Serve warm.

Keto Parmesan Chicken Wings

Parmesan version:

2 lbs chicken wings cut into drumettes and flats

½ cup (6 tbsp) grated Parmesan Cheese plus extra for garnish

1 tsp paprika

1 tsp mixed herb dry seasoning (keto)

Salt to taste

Cooking spray is required for the air fryer.

If you would prefer a plain version, you can use the same ingredient list, minus the parmesan and add garlic powder instead. Alternatively, chicken wings can be seasoned with additional cayenne pepper and a tsp of dry mustard for an extra kick.

Instructions

Parmesan Version

  1. Pat chicken wings dry after rinsing them and set aside in a bowl.
  2. In a small bowl mix together Parmesan, Paprika, mixed herb seasoning and salt.
  3. Coat the wings in your Parmesan mix.
  4. Preheat the air fryer to 350F (180C) and then spray the basket with cooking spray.
  5. Cook the chicken wings in batches for 15 mins, turning half way through.
  6. Garnish with extra Parmesan and fresh herbs.

Plain version

  1. Pat chicken wings dry after rinsing them and set aside in a bowl.
  2. Season with salt and pepper (and other seasonings you prefer) and mix well.
  3. Preheat air fryer to 350F (180C) and then spray the basket with cooking spray
  4. Cook the chicken wings in batches for 15 mins, turning half way through
  5. Serve hot and enjoy.

Mixed Keto Vegetables

Ingredients

1 yellow onion peeled and cut into large chunks

1 zucchini trimmed, halved lengthwise, and cut into large chunks

1 eggplant trimmed and cut into large chunks

1 green pepper halved, seeded, and cut into thick strips

1 cup cauliflower florets

1 cup broccoli florets

1 cup Brussels sprouts halved

½ cup avocado oil

2 teaspoons sea salt (or to taste)

1 ½ teaspoons dried oregano

½ teaspoon fresh ground black pepper

¼ teaspoon cayenne pepper

Instructions
  1. Preheat the oven to 450 degrees. Coat an 18 x 12 rimmed baking sheet with avocado spray.
  2. Place the vegetables in a large bowl and toss with the avocado oil, salt, oregano, black pepper, and cayenne pepper.
  3. Arrange the vegetables in a single layer and cook for 20 minutes. Stir and cook for 10 minutes longer, until lightly brown.
  4. Serve warm and enjoy.

Keto Zucchini Gratin

Ingredients

4 cups sliced raw zucchini

1 small onion, peeled and sliced thin

salt and pepper to taste

1 1/2 cups shredded pepper jack cheese (or cheese of choice)

2 tablespoons butter

1/2 teaspoon garlic powder

1/2 cup heavy whipping cream

Instructions
  1. Preheat oven to 375 degrees (F).
  2. Grease a 9×9 pan.
  3. Overlap 1/3 of the zucchini and onion slices in the pan, then season with salt and pepper and sprinkle with 1/2 cup of shredded cheese.
  4. Repeat two more times until you have three layers and have used up all of the zucchini, onions, and shredded cheese.
  5. Combine the garlic powder, butter, and heavy cream in a microwave safe dish.
  6. Heat for one minute or until the butter has melted. Whisk until smooth.
  7. Gently pour the butter and cream mixture over the zucchini layers.
  8. Bake at 375 degrees (F) for about 45 minutes, or until the liquid has thickened and the top is golden brown.
  9. Serve warm.

With four new keto dishes, or two brand new keto meals to start the new year, boredom will not be in your vocabulary for 2024!
